Salmon

Salmon

Salmon (Salmo salar): Our salmon comes from selected breeders, predominantly from certified aquaculture, sourced in Norway, Iceland, the Faroe Islands, and Scotland. From cold waters with low stocking densities and strong currents. This ensures consistent raw material quality throughout the year. Through controlled rearing and feeding, homogeneous quality is achieved, resulting in minimal variations in the final product.

  • It is considered very healthy, as it is rich in high-quality protein, vitamins (A, B, D), and essential omega-3 fatty acids.
  • Ideal for industrial portioning through standardized sizes (2–6 kg)
  • High yield during filleting and low trim loss
  • Versatile use in fresh, frozen, and smoked segments

Saithe

Saithe

Saithe, Coalfish (Pollachius virens): Saithe is an economically significant whitefish with very good availability from the North Atlantic.

  • Attractive price-performance ratio in the whitefish segment
  • Firm, easily processable structure for industrial processing lines
  • Neutral taste – optimal for seasoned or breaded products
  • High efficiency in further processing (fish sticks, block products)
  • Healthy protein: The flesh is very lean, contains high-quality protein that is easily digestible.
  • Rich in minerals: Saithe is an excellent source of iodine, which is important for thyroid function.

Cod

Cod

Cod (Gadus morhua): Cod is one of the classic premium whitefish with high demand in the European market.

  • High-quality, lean flesh with very good texture
  • High acceptance in the end consumer market
  • Certified fishing areas (MSC options available) support sustainability strategies
  • Cod has very tender, firm, lean, and snow-white flesh that is considered a delicacy. It tastes mild and slightly salty, making it versatile in the kitchen.
  • High nutritional value: The fish is rich in high-quality protein (approx. 18g per 100g), making it ideal for muscle building. It also contains important nutrients such as iodine, selenium, vitamin B12, and vitamin D.

Redfish (Sebastes norvegicus): Redfish from cold deep-sea areas offers stable quality with limited but reliable availability.
